Panzanella Salad with
Grapes and Radicchio
Recipe provided by Brandpoint
Prep time: 10 minutes • Cook time: 10 minutes • Servings: 6
Ingredients
• Dressing
• 2 tablespoons olive oil
• 2 tablespoons white balsamic
vinegar
• 1 tablespoon orange juice
• 1 teaspoon orange zest
• 1 teaspoon honey
• 1/2 teaspoon Dijon-style mustard
• 2 teaspoons chopped fresh tarragon
• 2 tablespoons chopped fresh
parsley
• 1/4 teaspoon kosher salt
• 1/4 teaspoon pepper
• 3 (1-inch thick) slices whole
grain rustic bread
• 3 (1-inch thick) slices of red onion
• 2 tablespoons extra-virgin olive oil
• 1/4 teaspoon kosher salt
• 1/4 teaspoon freshly ground
pepper
• 3/4 cup red California grapes
• 3/4 cup green California grapes
• 1 cup roughly chopped radicchio
• 1 cup large-dice English cucumber
• 1/4 cup chopped pistachios
• 2 ounces goat cheese, crumbled

Preparation
1. In a small bowl, combine the olive oil, vinegar, juice, zest, honey, mustard, tarragon,
parsley, salt and pepper. Set aside.
2. Heat grill or grill pan to medium high. Using a brush, lightly coat the bread and onion
slices with olive oil. Season with salt and pepper. Place the onion slices on the grill.
Cover and cook until charred, about 4 minutes, then flip and cook, covered, for another
2-3 minutes. Set aside. Grill the bread for 3 minutes or until toasted. Flip and grill another
minute. Set aside. Roughly chop the grilled onions and the bread into 1” square pieces.
3. In a large bowl, combine the onions, bread, grapes, radicchio, cucumber and pistachios.
Add the salad dressing and gently toss to combine. Divide the salad into 6 equal servings
and top each with goat cheese.

com). Helen’s Room provides free services
that include head coverings, prostheses and
support. Owner Monica Kahn has been doing
this since 1998. Helen’s Room offers
counseling and support groups for women
fighting breast cancer. It runs solely off of
donations, with every penny possible going
to products and patient services. Recently,
one of our own, has been diagnosed with
breast cancer. Officer Marco Lemus’ wife,
Jessica, is currently going through treatment.
The ESPOA decided to split funding this
year between Helen’s Room and the Lemus
family to help offset surgery costs.

He returned it the Cougar 20-yard line. With
time running out in the second quarter, Cougar
quarterback Kyle Williams hooked up with
Jeremiah Elima on a 45-yard touchdown pass
on the last play of the first half to give the
Cougars a 21-14 lead.
The third quarter turned out to be full of
offense from both teams. El Segundo had great
field position to start the second half. Thanks
to a penalty and a great second effort return
by James Fraelich, the Eagles took over on
the Hawthorne 41-yard line to open the third
quarter. Six plays later, Romero high-stepped
into the end zone on a quarterback keeper to
tie the game at 21-21.
The two teams traded scoring drives with
a 2-yard run by Joseph Taylor for a Hawthorne
28-21 lead. El Segundo responded
and needed just three plays to even the score.
Melton caught a pass for 15 yards and Dylan
Phillips caught another for 36 yards to the
Hawthorne 13-yard line. Sayson then finished
off the drive on the next play with a 13-yard
scamper to tie the game 28-28. On the ensuing
kickoff, Marcellus Henry recovered the
onside kick at the Hawthorne 35-yard line.
The Eagles had to settle for a 20-yard field
goal that sailed left.
That missed opportunity may have been the
game-changer. Hawthorne would go on to score
on its next two possessions -- an 80-yard drive
and an 83-yard drive. Sandwiched in between
the Cougars’ two scores, the Eagles’ offense
went silent. The lone highlight late in the
game was Luis Beas’ block of the Cougars’
PAT after the last score of the night.
Romero finished 16-22 for 163 yards with
one touchdown and one interception. He also
rushed for 62 yards and a score. Joey Gorte
rushed for one score, while Sayson picked up
54 yards on nine carries and one TD.
The Eagles host Beverly Hills Friday night
at 7 p.m. for their Homecoming game. The
parade down Main Street led by the band, the
Homecoming King/Queen and their court as
well as the different class floats, starts at 5 p.m.
Remembering Chuck Shaffer
The community is encouraged to attend a
memorial service for Chuck Shaffer on Saturday,
Oct. 13 at 10 a.m. at Stevenson Field.
Chuck was an icon for over three decades
helping the El Segundo High School football,
basketball and baseball teams. Chuck passed
away recently and his loss has sent shock waves
through our community. Please join coaches

adored him for a time of remembrance. If
