September 5, 2013 Page 9 S ummer vacation is over, the kids are back in school, and all is well. Or is it? Now, we have the rush of morning, the confusion of homework, the after-school activities,,activitiesool the angst of peer pressure, and of course, what’s for dinner. Try to make it a one-pot meal. This is my favorite way to cook. and how to bang them My mom tells the story of me pulling a chair up to the stove so I could reach by Chef Shafer the pot in which I was cooking lunch for all of my friends in the ‘hood. I would go into my friends’ houses and raid their mom’s pantry to create what wee called “Michael’s Goulash.” It would consist of Campbell vegetable soup canss from another kid’s house, then maybe some leftover meat or cold cuts fromm another house. I would heat it all up, make some toast and top the whole thinggn with cheese. With this and some cold drinks, we were rockin’ it. Now, I make for my kids my sort-of-grown-up goulash. Here it is: The Chef Dad’s Goulash (or the “one pot that’s good for 3-4 days”) 2 pounds course ground beef, turkey, chicken, Goulash pork or a mixture of all First, take the ground meat and place 2 large onions, diced on a pan in the oven at 350 degrees for 1/4 cup vegetable oil 15-20 minutes, stirring occasionally. 2 medium zucchinis sliced in rounds This is to precook the meat so that 1 pound of sliced mushrooms you can strain the excess fat. 2 each 15 oz. cans of diced tomatoes 3 cups chicken broth In a large soup pot, heat the vegetable Salt and pepper oil, then sauté the onions till golden brown. Add the mushrooms and Seasoning zucchini and cook slightly. This is where it gets tricky. Depending on your crowd or your mood, you can go Italian Add the tomatoes and seasoning of with some dried basil and garlic salt; Mexican your choice, then the meat and broth. with some coriander and chili powder; or Simmer for 30 minutes and serve with BBQ with some BBQ sauce and a little bread, tortillas, rice and pasta.
