Mediterranean Pizza
Prep Time: 15 Minutes • Cook Time: 15 Minutes • Yield: Serves 4
Ingredients
Preparation
Recipe provided by Brandpoint.
• 1 1/2 cups halved red California
grapes
• 2 tablespoons lightly chopped
Italian parsley leaves
• 1/4 cup slivered red onion
• 1 tablespoon lemon juice
• 3 tablespoons extra-virgin olive
oil (divided) plus additional for
drizzling
• Pinch of salt
• Freshly ground black pepper to
taste
• 1 garlic clove, minced
• 1/2 pound ground lamb, beef, or
dark meat turkey
• 1 tablespoon tomato paste
• 1/2 teaspoon ground cumin
• 1/2 teaspoon ground paprika
• Pinch cayenne
• 2 whole-wheat naans (about 4.4
ounces each)
1. Heat oven to 475 F. In a large bowl combine the grapes, parsley leaves,
red onion, lemon juice and 1 tablespoon olive oil. Season with salt
and pepper and set aside.
2. In a large skillet heat 1 tablespoon oil. Add the garlic and meat, and
cook until browned, 2-3 minutes. Stir in the tomato paste, cumin,
paprika and cayenne.
3. Place naans on parchment-lined baking sheets, brush with the remaining
1 tablespoon olive oil and spread the meat mixture on the naans.
Bake until each naan is browned and lightly crisp, 8-10 minutes. Top
with grape mixture and drizzle with additional olive oil if desired.
Cut in pieces and serve.
Hawthorne Happenings from page 3
event several years ago. This year’s Expo will
be held on Wednesday, January 23rd from 3
to 7 p.m. at the Hawthorne Memorial Center.
The topic this year is: Business Networking in
an Electronic World. There will be breakout
sessions, booths, and you can vote for your
favorite Hawthorne businesses. A lot of good
information is given out to small business
people. There usually is some good food,
just no cold ones.
Make plans to wonder over to the Memorial
Center next Wednesday.
You Can’t Hide – Your ID
is Revealed
Some of my loyal readers have personally
confessed to reading this stuff. In the last
week or so, three of my loyal readers, Betty
Keel, Brian Hall, Al Richards, have identified
themselves. They have been brave enough to
come clean and own up to the fact that they
actually look forward to receiving my stuff
every week. Rumor has it that Mr. Cougartown
himself, Bob Jensen and David Breger, who
lives in NJ or CO, also subject themselves to
my attempts at humor.
Cut Out the Cold Ones
– Lose Weight
Today’s Sacramento Bee, my local newspaper,
reports that by drinking beer you have
less of a chance of losing those extra pounds
you wanted to shed this new year. So my
solution, have a non-alcoholic cold one. I
know that’s like kissing your dog, but if that’s
what it takes to shed some belly fat, then go
for it. Maybe a few more trips to the gym
or a longer walk around your neighborhood
will allow you to go back to those real cold
ones. Is it better to be plump and happy
or abstinent and skinny? We usually refer
to fat Germans as “well fed” or “solid” or
“healthy”. Any skinny Germans are sickly
looking and have not had enough brats and
beer to build up that body fat. God wants us
to be healthy and happy. Here’s to whatever
it takes to reach your goals. (Did you know
that kissing your dog is safer than kissing
another human? Something about Fido carrying
fewer germs than your spouse. I’m not
recommending it, I’m just saying.)
Not All Things Good Up Here
If you got the wrong impression from me
that all is wonderful up here in NorCal, let
me share a few disturbing stories with you.
In the last four months three peace officers
have been shot and killed in this area. A
county sheriff in Rancho Cordova, a police
officer in Newman, and now just last week
a 22 year old Davis police woman, Natalie
Corona, who had just been assigned to her
beat for less than three months was ambushed
and shot to death while investigating a minor
three car collision. A librarian was shot sitting
in her car in the parking lot of the college
library where she worked. The City of Elk
Grove announced that their “ghost mall” that
had been abandoned ten years ago before it
ever opened its doors would be demolished
by the Howard Hughes Corporation. You see,
everywhere we might go, death, violence,
crime and hatred is always somewhere to
be found. There is no escaping it. We can
however remember who is in charge. We
don’t always understand why a young life
has been cut short, all we can do is trust that
God’s will would be done. By allowing God
to lead us, we can be certain that no matter
what happens, we are loved and his watchful
hand is guiding us.
It is Written
“Put it in writing”, that phrase usually
means that we are serious about something,
believe what is written to be true, or we are
making an agreement legally binding. In this
“Metoo” era, what we say to a person of the
opposite sex or same sex in private, can be
held against us. With all the fake news and
internet sensationalism, it’s hard to determine
what is true and what is made up. I believe
there is one book that is true, inerrant, without
error. Why can I say this about the Bible?
Because of 2 Timothy 3:16-17 -“All scripture
is inspired by God and profitable for teaching,
for reproof, for correction, and for training in
righteousness, that the man of God may be
complete, equipped for every good work.”
God’s Word is his way of communicating with
us. When it says, “it is written” then there
is no question that it is exactly what it says.
If you want better advice than simply having
a cold one and relaxing, then try reading the
Book of Proverbs for starters. Try reading the
third chapter of John for some really good
news. It’s all good stuff. It’s all true.
