Shrimp & Corn Chowder
with Sun-Dried Tomatoes

Creamy potato soup is dressed up with shrimp, corn and sun-dried tomatoes. This chowder is dressy enough for company, but easy enough for weeknights too.

Ingredients
• 1 can (10 1/2 ounces) Campbell’s® Condensed Cream
of Potato Soup
• 1 1/2 cups half and half
• 2 cups frozen whole kernel corn
• 2 tablespoons sun-dried tomatoes cut into strips
• 12 ounces small or medium peeled and deveined
cooked shrimp (about 1 cup)
• 2 tablespoons chopped fresh chives
• 1/8 teaspoon ground black pepper or cayenne pepper
• Step 1: Heat the soup, half-and-half, corn and tomatoes in a 3-quart saucepan over medium heat to a boil. Reduce the
heat to low. Cook for 10 minutes.
• Step 2: Stir in the shrimp and chives and cook until the mixture is hot and bubbling. Season with the black pepper.
• For a lighter version, use skim milk instead of the half-and-half.

Giroux is El Segundo’s representative on the
Los Angeles Area Advisory Committee. It
reviews airport operations issues that impact
nearby communities and makes recommendations
to the airport commission, Los Angeles
mayor’s office and city council.
Airport officials say the expansion is
needed to improve efficiency at the nation’s
second-busiest airport. A people mover that
will convey passengers along Century Boulevard
from a transportation and parking hub
is currently under construction.
In Other Council Actions:
TopGolf has decided to redesign the ninehole
course to make it more challenging and
attractive to golfers of all skill levels. The
company, which took over The Lakes driving
range and course and will manage the cityowned
property, asked the council to amend
the original development and design agreement.
TopGolf will spend another $800,000
to create a new course layout, with all-new
grass on tees, greens, roughs and fairways. The
former site of The Lakes - when it opens in
May 2022 - will be an all-new course instead
of a modified one. The council unanimously
approved these changes:
- All tees being expanded to allow for short,
medium, and long hitters. This should attract
golfers of varying experience levels. The tee
boxes will be laser leveled, too. New drainage
and sand will be used on all bunkers instead
of just some. Incorporating the lake on the
course to two holes on the course instead
of one. Golfers will face water hazards on
holes number seven and nine.
The nine-hole course will feature a
three-level driving range, restaurant, and
entertainment venue on site. It’s estimated
the site will bring 400 jobs and generate up
to $2 million per year in new revenues for
El Segundo.
• On the recommendation of the council’s
Pension Ad Hoc Committee, the members
adopted a policy to follow in the event of
future unfunded pension liabilities. Should
the state-run public-employee pension system
- CalPERS - raise El Segundo’s contribution
level, the city would tap up to 50 percent
of any new revenue to pay down what it
owes. Local governments must pay higher
contributions when CalPERS reports lowerthan
expected earnings on its portfolio.
The issue of unfunded pension obligations
to CalPERS remains a huge concern to the
current City Council. El Segundo is looking
at issuing $152 million in low-interest bonds
to pre-pay its future pension costs and avoid
millions of dollars in interest charges to CalPERS.
The pension-finance plan could save
the city $61 million through 2041.
• City Treasurer Matt Robinson reported
El Segundo’s investment portfolio earned
$413,000 in the fourth quarter of 2020. Despite
the economic slowdown and loss of tax
revenues due to COVID-19, the city ended
the calendar year with a positive cash flow.
The balance at the end of December was
$737,577, according to the treasurer’s report.
• On a narrow 3-2 vote, the council OK’d
spending $581,000 to replace the windows,
install shades and remove hazardous materials
from City Hall offices. The council accepted
the bid by A.J. Fistes Corp. Councilman Scot
Nicol and Councilwoman Carol Pirsztuk
voted against the expenditure. The windows
at City Hall haven’t been replaced in several
decades, and Councilman Giroux said the
project was long overdue.
• The state Homeland Security Grant program
awarded the city a $541,900 grant to
buy equipment and training so that local fire
departments are ready to respond to acts of
terror or national emergencies. El Segundo
is recognized as a leader in preparedness
response, having created an All-Hazards
Incident Management Team before the COVID
19 pandemic began a year ago.
• The council accepted a $43,000 grant
from the California Department of Justice to
reduce tobacco use among teens. The Police
Department will use some of the money for
outreach to minors, enforcement, and to catch
retailers who break the law. The legal age
to buy tobacco products in the state is 21. •

The suspect started a fire inside a garbage can.

Coast Highway and transported to UCLA
Exodus for a 72 hour psychiatric evaluation.
A traffic collision (with injuries) report was
taken at 1025 hours from 1900 block of East
Mariposa Avenue, vehicle versus bicycle.
An identity theft report was taken at 1058
hours from the 500 block of Main Street.
Unknown suspect(s) used the victim’s identity.
A grand theft report was taken at 1458
hours from the 300 block of Main Street.
Unknown suspect(s) took the catalytic converter
from victim’s vehicle.

hours from Concord Street and Grand Avenue
and transported to Harbor UCLA Exodus
Medical Center.
A plates recovery report was taken at 2028
hours from Concord Street and Grand Avenue.
Located was one plate that was reported stolen
out of Huntington Park Police Department. •
