Leftover Turkey Hash 1 onion diced 2 ears of corn off the cob 1 pound of sliced mushrooms 1 pound of leftover turkey meat, chopped 1/8 cup vegetable oil 1 cup heavy cream 2 cups chicken broth Salt and pepper to taste 6 english muffins or biscuits cut in 1/2 and toasted 12 poached eggs In a hot saucepan, sauté the onions, corn and mushrooms in the vegetable oil. Add the turkey, cream and chicken stock and simmer for about 10 minutes. Season with salt and pepper. Place the muffins on a plate. Pour the turkey hash over them and top with a poached egg.
