It tells a great story about the business that I’m in and how it can be both rewarding and detrimental to one’s lifestyle. When I went through my apprenticeship in the 70s we had a class of 20 apprentices. All 20 graduated and went off into the industry searching for a culinary epiphany. Slowly I lost track of them but then through Facebook I was able to find out what happened to them. Not to my surprise I was the only one who is still in the business. All the others got out because of a number of reasons. The most prevalent reason was the mental stress and physical strain on the body. I am now starting my 44th year in kitchen and still love it. I have had three orthopedic surgeries and need to have TWO MORE. I have friends that have turned to drugs or alcohol to combat the pain. Some have even lost their homes and families. I would not wish this career on my worst enemy but for me it has been a great ride and I’m still cruising. Roast in a 325-degree oven for 1 hour covered, then turn oven up to 375º and cook uncovered for 15 minutes more or till cooked to an internal temp of 145º. • Cool and slice as thin as possible. Sandwich ingredients: 6 bomber rolls 6 teaspoons spicy mustard 6 tablespoons mayonnaise 1 red onion shaved 20 pieces sweet pickles 12 slices manchego cheese 12 slices mozzarella cheese 1 stick butter To make the sandwiches: • Cut open the rolls. • Spread one side with mustard and one side with mayonnaise. • Layer out the roast pork, onions, then pickles, and top with the cheese. • Place the top on the sandwich, brush with butter and place on a hot flat top griddle. • Set a brick or weight wrapped in foil on top of the sandwich and press down on it. • When golden brown, repeat on the other side. Or if you have a sandwich press use that.
