But more importantly, I can’t wait to have all of my favorite foods from my youth. Buffalo has such and how to bang them great local specialties that I have not been able by Chef Shafer to find anywhere else in the world. Yes, we all know about Buffalo wings, but even the famous wing has been bastardized by the fast food industry. We in Buffalo don’t call wings, subs or hotdogs fast food. We call them “specialty” foods. Fast food is a manufactured, processed product. Specialty foods are still made with real ingredients and in a style of the past. One of my cravings will be for the riccotta cheese and brown sugar rice pudding from a small Greek coffee shop on the west side of Buffalo. It’s light, but supper rich. Here is my rendition of this Buffalo classic. The Chef Riccotta Cheese and Brown Sugar Rice Pudding 3 cups heavy cream 4 whole eggs ½ cup brown sugar 1 teaspoon cinnamon 1 teaspoon vanilla 1 cup chilled & cooked white rice (I like to use sushi rice or a short grain sticky rice) 1 cup riccotta cheese Pinch salt Mix together all ingredients and place in a buttered casserole dish. Bake at 325 degrees 2101 Rosecrans Ave. for 30 to 45 minutes or until firm to the touch and golden brown on the top. El Segundo, CA 90245 Can be eaten hot or cold.
