July 23, 2015 Page 5 and how to bang them by Chef Shafer I just got back from the farmers Market in Torrance. All the stone fruit is coming in and they look great and taste even better. What are Stone Fruit? That is what all the peaches, plums, nectarines and such are called. This is the height of the season and they are not just a snack or dessert food. Here is a great way to grill them and use them in a salad or accompaniment to grilled fish, chicken, beef, lamb, pork. live well, love much, laugh often! The Chef Grilled Stone Fruit Ingredients • 6 peaches firm but ripe cut in half and remove stone/pit • 1/8 cup extra virgin olive oil • 1/2 cup chopped chives or green onions • sprinkle of kosher salt • sprinkle of black pepper Preparation 1. Mix lightly all ingredients 2. On a hot clean grill place the fruit cut side down and grill for 10 to 15 seconds longer if desired 3. Make a ¼ turn with each piece and repeat. 4. Flip the fruit over and repeat the same on the skin side of the fruit. 5. Remove from grill and serve. Options • Drizzle with balsamic vinegar and stuff with goat cheese or other soft cheese for an appetizer • Chop and mix with greens and toasted nuts oil and vinegar for a salad • Chop and add onions cilantro and lemon juice for a salsa Have fun it’s spring!
