This is a great side dish for dinner with chicken, lamb or even seafood. It is also a great bed for some fried eggs or stuffed into a burrito with scrambled eggs for breakfast. Have fun with it and happy holidays! The Chef and how to bang them by Chef Shafer Roasted Pumpkin and Potato Hash First, peel and seed one medium pumpkin. Then, dice into 1-inch squares. Dice 1 large onion Dice 2 large potatoes Chop ½ pound thick, sliced bacon Mix together and season with salt and pepper Place in a 350-degree oven and cook for 15 to 20 minutes or ‘til tender and golden brown. Next, grab a large sauce pan. Sautee 1 pound of spinach with 2 tablespoon of butter. Add 1 cup of heavy cream and the pumpkin mixture.
