July 11, 2013 Page 5 A great lady passed away last week. She was the heart and soul of farmer’s markets at Wilson Park and other venues. She set the standards that many, if not all farmers’ markets should operate by. and how to bang them Her name was Mary Lou Wiess. She taught me so much about the market and the season’s bounty, and was a fixture in the community. Chef Shaferby I remember taking my monthly cooking classes at the Saturday Market and we would shop for all kinds of goodies. Mary Lou and I would then come back to the Depot and create some great fresh flavors of the season. On July 27, the next class is planned to go to the market. It will not be the same without Mary Lou telling me that my students are looking for me. Then she would snicker and tell my students that I’m running late! This week’s recipe is dedicated to Mary Lou, who was in charge of the largest farmers market and ran it better than anyone else. The Chef Mixed Mushroom, Spring Onion and Chardonnay Cream Sauce ½ cup sliced spring onions or an onion of your choosing 2 pounds of mixed mushrooms, sliced (I use Portobellos, Crimini, Shiitake, and regular white mushrooms) ¼ cup olive oil ½ cup chardonnay wine 1 cup heavy cream 2 tablespoons unsalted butter Salt and pepper to taste 4 fresh basil leaves, coarsely cut up In a hot large sauté pan, pour olive oil then add the onions. Sauté for about one minute or until onions are translucent. Add the mushrooms and sauté for another minute or so. When the mushrooms are soft, add the chardonnay and let it reduce down by half. Pour in the cream and let the mixture cook for one minute. Continue to stir as it will prevent it from burning or sticking. Season with salt and pepper, then slowly add the butter while stirring to incorporate butter into the mix. Just before you serve the mix, sprinkle some basil and use the extras to garnish the dish.
