The Chef Steamed New Potatoes With Fresh Basil And Butter The sweet baby potatoes are starting to come into the farmers market. These young spuds are very tender and need very little in the way of seasoning. This is a favorite way of preparing them. Ingredients Preparation 1. In a large pot bring water to a boil when the water in boiling add the potatoes and boil until tender 15 to 30 minutes depending on size. Check to see if done by piercing them with a toothpick. 2. Drain off all the water. 3. Toss with the basil, butter, salt and pepper. 4. Serve right away. • 2 pounds of small potatoes • 8 to 10 fresh basil leaves chopped coarsely • 3 tablespoons of unsalted butter at room temperature • Kosher salt and fresh ground black pepper to taste
