The last couple of years the watermelons have not been very sweet. But I thought I would give the new crop a try. Boy, am I glad I did. They are very sweet and firm. I always love the sweetness of watermelon and balsamic vinegar in a salad. I know it sounds a little weird. But when I was traveling through Europe I once had a salad made from wild strawberries, a drizzle of aged balsamic vinegar and a farmer style goat cheese. The combination of the sweet, sour and creamy was a culinary euphony. Here is my version of that salad. The Chef and how to bang them by Chef Shafer Summer Melon and Beet Salad Ingredients: 1 each small watermelon or about 2 pounds of peeled melon meat, diced 1 large red and 1 large yellow beet cooked in boiling water, peeled, chilled and diced 8 to 10 fresh basil leaves, chopped coarsely 1/4 cup good aged balsamic vinegar 8 to 10 oz. goat cheese Freshly ground black pepper and sea salt to taste Directions: • Arrange the diced melon and diced beet on a large platter so the colors intermingle. • Drizzle with balsamic vinegar. • Sprinkle the basil leaves around. • Crumble the goat cheese on top. • Season with the salt and pepper. Have fun! P.S. Correction from a previous article: The Meyer lemon pie had incorrect baking time and temp. The correct temp is 300° and the correct baking time is 25 to 30 minutes.
