Growing up in an Italian neighborhood, I was introduced to what we called a cold antipasto salad. and how to bang them by Chef Shafer Antipasto (pluralantipasti), often spelled and/or pronounced as antipasta (antipasta salad), means “before the meal” and is the traditional first course of a formal Italian meal. Traditional antipasto varies from one area to another but they are always a great way to start. Every Italian deli has their own version of this tangy chilled dish, and the following is mine. Bouno apetito! The Chef Chilled Antipasto Salad 1 cup diced tomatoes, or cherry tomatoes, cut in half 1 cup diced cucumber ¼ cup diced red onion, very fine 1 can garbanzo beans 1 cup diced Parmesan cheese, or you can use mozzarella or feta if you like 1 pound chopped hard salami, or other sausages or prosciutto cut into julienne strips ½ cup chopped kalamata olives 1/8 cup olive oil 1/8 cup balsamic vinegar 6 to 8 basil leaves, ripped Garnish 3 hardboiled eggs peeled and cut into wedges Live, Love, Laugh, Eat Chef Shafer, Owner/Chef of Depot, Buffalo Fire Dept., Mix all the ingredients together in a bowl then chill.
