The Chef Amber Ale Steamed Mussels and Garlic Tomatoes 2 pounds cleaned fresh mussels (make sure you pull the breads off of them or ask the fish market to do it for you) ½ cup diced onions 3 smashed garlic cloves 1/8 cup olive oil 2 cups diced tomatoes fresh 1 bottle of amber ale 1 cup broth or water Salt and pepper 3 tablespoons unsalted butter 5 leaves fresh basil chopped roughly In a hot saucepan sauté the onions and garlic in the olive oil till lightly brown.
