Roasted Pumpkin With Sweet Onions And Bacon Ingredients • 1 medium pumpkin • 1 diced red onion • 1/2 pound of bacon • 1/4 cup olive oil • 2 tablespoons of butter • Salt and Pepper Preparation 1. Peel the pumpkin skin off of the pumpkin Remove seeds and the stuff inside. 2. Dice the pumpkin into 1-inch pieces. 3. Season with salt and pepper. 4. Add 1 diced red onion, 1/4 cup olive oil, and mix together. 5. Spread out on a baking sheet and bake at 375 for 20 to 30 minutes or until golden brown and soft to the touch separately. 6. Cook the bacon until crispy. Chop bacon and mix with the pumpkin. 7. Heat the mixture with 2 tablespoons of butter check and make sure you have seasoned it enough with salt and pepper. This is a great side dish with seafood chicken or lamb.
