Finally I’ve got a break and have started some new things at depot! Here is one of them. live well, love much, laugh often! The Chef Sautéed Arugula with Toasted Pine Nuts and Dried Figs Ingredients • 1/2 cup chopped red onions • 2 tablespoons olive oil • 1 pound arugula leaves • 1/4 cup toasted pine nuts • 1/2 cup dried chopped figs • 1/8 cup chicken broth • salt and pepper to taste Preparation 1. In a large hot pan sauté of the onions in the oil till golden brown. 2. Add the arugula and the chicken broth and mix while it wilts down 3. Add the nuts and figs season with the salt and pepper. Serve immediately. Goes great as a side dish with fish chicken or lamb. Or, you can add it to pasta or rice!
